Lipid and Glucose Response to Plant-based and Regular Burgers

This study evaluates the blood lipid and glucose response to two burgers: 1) A plant-based meat alternative burger and 2) a regular beef burger in a cross-over trial.

About this study

Postprandial blood lipids and glucose are risk factors for cardiovascular disease. This study evaluates the postprandial response to consuming a plant-based meat-alternative burger and a regular beef burger. Ten participants will consume each burger on separate days. Blood lipids, glucose, and blood pressure will be assessed for six hours after each condition.

Who can participate

Healthy volunteers accepted: Yes

Only the study team can determine whether someone qualifies for participation.

Inclusion criteria

  • Body mass index 25 or higher

Exclusion criteria

  • Not diagnosed with diabetes
  • Not on any medications for glucose or lipids

Treatment and study plan

Acute consumption of different burger types

Dietary Supplement

Consumption of beef (animal-based) vs pea (plant-based) burgers

Primary outcomes

  1. Change in triglycerides (mmol/L)

    Time frame: 6 hours

    Blood measure of triglycerides

Secondary outcomes

  1. Change in glucose (mmol/L)

    Time frame: 6 hours

    Blood measure of glucose

  2. Change in cholesterol (mmol/L)

    Time frame: 6 hours

  3. Change in high density lipoprotein (mmol/L)

    Time frame: 6 hours

  4. Change in low density lipoprotein (mmol/L)

    Time frame: 6 hours

  5. Change in systolic blood pressure (mmHg)

    Time frame: 6 hours

    systolic blood pressure measured with a sphygmomanometer

  6. Change in diastolic blood pressure (mmHg)

    Time frame: 6 hours
